Ethnic Cuisine: What is curd when a bread recipe calls for curd?

Jude Kennelly: It's specific to the type of cuisine you're asking about. In some, curd is a lot thicker, basically like chunks of soft mozzarella cheese. Some places consider curd to be like cottage cheese or queso fresco.
